Here’s a classic Spanish Paella recipe along with instructions:
Ingredients
For the Paella:
400 g Bomba rice (or any short-grain rice)
1 liter chicken or seafood broth
200 g chicken (cut into pieces)
200 g shrimp (peeled and deveined)
200 g mussels (cleaned)
1 red bell pepper (sliced)
1 onion (chopped)
3 cloves garlic (minced)
2 medium tomatoes (chopped)
1 teaspoon smoked paprika
1/2 teaspoon saffron threads (optional)
100 g green peas (fresh or frozen)
Olive oil
Salt and pepper
Lemon wedges (for serving)
Fresh parsley (for garnish)
Instructions
Prepare the Base: In a large paella pan or skillet, heat olive oil over medium heat. Add the chopped onion and garlic, and sauté until translucent.
Cook the Chicken: Add the chicken pieces to the pan and cook until browned on all sides.
Add Vegetables and Spices: Stir in the bell pepper, chopped tomatoes, smoked paprika, and saffron. Cook for about 5 minutes until the vegetables soften.
Add Rice and Broth: Add the Bomba rice, stirring to coat it in the mixture. Pour in the broth and season with salt and pepper. Bring to a boil.
Add Seafood: Reduce the heat to low and add the shrimp and mussels on top of the rice. Do not stir the rice after this point.
Cook the Paella: Simmer for about 15-20 minutes until the rice is cooked and has absorbed most of the liquid. If necessary, add more broth or water during cooking.
Add Peas: In the last 5 minutes of cooking, sprinkle the green peas on top.
Rest and Serve: Once cooked, remove from heat and let it rest for about 5 minutes. Garnish with fresh parsley and lemon wedges. Serve hot!
