Paella – Spain

Here’s a classic Spanish Paella recipe along with instructions:

Ingredients

For the Paella:

  • 400 g Bomba rice (or any short-grain rice)

  • 1 liter chicken or seafood broth

  • 200 g chicken (cut into pieces)

  • 200 g shrimp (peeled and deveined)

  • 200 g mussels (cleaned)

  • 1 red bell pepper (sliced)

  • 1 onion (chopped)

  • 3 cloves garlic (minced)

  • 2 medium tomatoes (chopped)

  • 1 teaspoon smoked paprika

  • 1/2 teaspoon saffron threads (optional)

  • 100 g green peas (fresh or frozen)

  • Olive oil

  • Salt and pepper

  • Lemon wedges (for serving)

  • Fresh parsley (for garnish)

Instructions

  1. Prepare the Base: In a large paella pan or skillet, heat olive oil over medium heat. Add the chopped onion and garlic, and sauté until translucent.

  2. Cook the Chicken: Add the chicken pieces to the pan and cook until browned on all sides.

  3. Add Vegetables and Spices: Stir in the bell pepper, chopped tomatoes, smoked paprika, and saffron. Cook for about 5 minutes until the vegetables soften.

  4. Add Rice and Broth: Add the Bomba rice, stirring to coat it in the mixture. Pour in the broth and season with salt and pepper. Bring to a boil.

  5. Add Seafood: Reduce the heat to low and add the shrimp and mussels on top of the rice. Do not stir the rice after this point.

  6. Cook the Paella: Simmer for about 15-20 minutes until the rice is cooked and has absorbed most of the liquid. If necessary, add more broth or water during cooking.

  7. Add Peas: In the last 5 minutes of cooking, sprinkle the green peas on top.

  8. Rest and Serve: Once cooked, remove from heat and let it rest for about 5 minutes. Garnish with fresh parsley and lemon wedges. Serve hot!
