Kebab is a beloved Turkish dish made with grilled meat, often served with vegetables, rice, or bread. There are many varieties, but one of the most popular is Adana Kebab, known for its spicy flavor. Here’s a classic recipe for making kebab at home:

Ingredients:

For the Kebab:

  • 500 g ground lamb (or a mix of lamb and beef)

  • 1 large onion, grated

  • 2-3 cloves garlic, minced

  • 1-2 green chili peppers, finely chopped (adjust to taste)

  • 1 tsp cumin

  • 1 tsp paprika

  • 1 tsp black pepper

  • Salt, to taste

  • Fresh parsley, chopped (optional)

For Serving:

  • Pita bread or flatbreads

  • Grilled vegetables (peppers, tomatoes, onions)

  • Rice or bulgur

  • Fresh salad (cucumbers, tomatoes, onions)

  • Lemon wedges

Instructions:

  1. Prepare the Mixture: In a large bowl, combine the ground meat, grated onion, minced garlic, chopped chili peppers, cumin, paprika, black pepper, and salt. Mix well until all ingredients are thoroughly combined. For added flavor, let the mixture rest in the refrigerator for about 30 minutes.

  2. Shape the Kebab: Wet your hands to prevent sticking, and shape the meat mixture onto skewers, flattening it slightly as you go. If using wooden skewers, soak them in water for about 30 minutes beforehand to prevent burning.

  3. Preheat the Grill: Preheat your grill or barbecue to medium-high heat.

  4. Grill the Kebab: Place the skewers on the grill and cook for about 10-15 minutes, turning occasionally, until the meat is browned and cooked through.

  5. Serve: Serve the kebabs hot with pita bread or flatbreads, grilled vegetables, rice or bulgur, a fresh salad, and lemon wedges for squeezing on top.
