Here’s a delicious Biryani recipe along with instructions:
Ingredients
For the Rice:
300 g basmati rice
600 ml water
2-3 green cardamom pods
3-4 cloves
1 stick cinnamon
1 bay leaf
Salt (to taste)
For the Meat:
400 g chicken or lamb (cut into pieces)
1 large onion (thinly sliced)
2 tomatoes (chopped)
2-3 green chilies (slit)
1 tablespoon ginger-garlic paste
1/2 cup plain yogurt
1 teaspoon red chili powder
1 teaspoon turmeric powder
1 teaspoon garam masala
Fresh coriander and mint leaves (for garnish)
3 tablespoons oil or ghee
Instructions
Prepare the Rice: Rinse the basmati rice under cold water until the water runs clear. Soak it in water for 30 minutes, then drain.
Cook the Rice: In a pot, boil 600 ml water with cardamom, cloves, cinnamon, bay leaf, and salt. Add the soaked rice and cook until 70% done. Drain and set aside.
Cook the Meat: Heat oil or ghee in a large pan. Add sliced onions and sauté until golden brown. Add ginger-garlic paste, green chilies, and cook for a minute.
Add Tomatoes and Spices: Add chopped tomatoes, red chili powder, turmeric, and salt. Cook until tomatoes soften. Then add the meat and yogurt. Cook until the meat is tender and cooked through.
Layer the Biryani: In a large pot, layer half of the partially cooked rice. Add the meat mixture, then the remaining rice on top. Sprinkle garam masala, coriander, and mint leaves.
Cook on Low Heat: Cover the pot with a tight lid and cook on low heat for about 20-25 minutes to let the flavors meld.
Serve: Gently fluff the biryani before serving. Garnish with additional coriander and mint leaves. Serve with raita or salad.
